Mochi ice cream

Mochi ice cream is easy to make! With the right sweet rice flour and a micro wave oven, it only takes a few minutes. Fill the rice buns with your favourite ice cream(s) and let them firm up in your freezer before serving!
Ingredients
  • 120 ml (1/2 cup) sweet glutenous rice flour
  • 180 ml (3/4 cup) sugar
  • 180 ml (3/4 cup) water
  • Optional: food colouring of your liking
  • For dusting: about 120 ml (1/2 cup) or so of potato flour, tapioca starch, rice flour or similar
  • Filling: A few (half-)scopes of your favourite ice cream(s)
Instructions
  1. Put the rice flour in a micro-wave safe bowl and mix well with water.
  2. Add the sugar and - if using - food colouring. Mix well.
  3. Cover (preferably) the bowl with a plastic film with a couple of holes in, and put in your micro wave oven.
  4. Micro-wave for about 1 minute, stir the dough, then micro-wave for about another minute.
  5. Work the dough a little and micro-wave some more until ready (possibly plus 2 x 30 seconds but would depend on your micro-wave; check in between - the dough should be sticky but formable, and the colour should be a bit shiny and verge towards the pale).
  6. Dust a plate with your preferred (taste-less) starch and place the dough there. Dust the sticky dough for easier handling and let cool down a little.
  7. When still warm but cool enough to handle, flatten the dough with a rolling pin (dust the pin before using!) or with your hands (dust them too!).
  8. Let the flattened dough cool down further, say for about 20-30 minutes in your refrigerator.
  9. Take out and make circles with a suitable glass or cookie cutter: remember to make the circles big enough to host the ice cream content and still be possible to close!
  10. Place about half a scope or less of ice cream on one of your dough circles and close them.
  11. To ensure a better shape while freezing, wrap the mochi tightly in some plastic film (and put them in the freezer).
Notes
To limit the risk of the ice cream starting to melt while you prepare the mochi, only take out as much ice cream as you need for one mochi: make that mochi and put it in the freezer before you move on to make the next one!
