Sweet Thyme ice cream

This alluring recipe was Inspired by my friend Lena's fond recollections of once having had Thyme ice cream. The ice cream base follows a base recipe by famous Belgian chef Pierre Wynants, who once headed the famous, triple-Michelin starred, restaurant Comme Chez Soi in Brussels, Belgium.
Ingredients
  • 500 ml (about 2.1 cups) milk
  • 250 ml (about 1 cup) cream
  • 5 egg yolks
  • 150 ml (about ¾ cup) sugar
  • 1-2 pots of fresh Thyme sprigs (up to about 30-40 grams' worth; ultimately depending on taste!)
Instructions
  1. Mix milk, sugar and egg yolks in a sauce pan.
  2. Heat while whisking until the base reaches the so-called nappe stage (about 82ยบ Celsius).
  3. Take off from the heat: Now add the cream and the Thyme sprigs.
  4. Leave the Thyme sprigs to soak in the ice cream base while it cools down (at least 15 minutes and possibly longer, according to preferred flavour-strength).
  5. Remove the sprigs (before discarding, gently squeeze the sprigs to recover any remains of the ice cream base).
  6. Put the ice cream base in the fridge to chill for a few hours or over night.
  7. Churn in your ice cream machine or still-freeze using your ordinary kitchen refrigerator.
