Blood orange sorbet with chile and cinnamon

A red-hot, sweet blood orange sorbet guaranteed to keep you both merry and alert!
Ingredients
  • 250 ml (about 1 cup) sugar
  • 200 ml (about 0.8 cup) water
  • about 500 ml (2⅔ cup) blood orange juice (should require about 8 blood oranges)
  • 1 teaspoon dried cinnamon powder
  • ¼- 1/3 teaspoon (or according to your own chile threshold - exercise caution!) dried chile pepper (preferably of "drier" flavour types such as jalapeƱo, serrano or chile de arbol)
Instructions
  1. Mix the sugar with the water and the juice and whisk well until all sugar has resolved.
  2. (Check the sweetness and adjust it, if required, by adding either more sugar or more water: use the Egg Test, or a special instrument like a hydrometer or a refractometer.)
  3. Add the spices and whisk well to avoid any clumping.
  4. Churn in your ice cream machine until finished (or still-freeze the sorbet base in your freezer).
  5. Enjoy!
